Angelica Food will be showcasing their unique culinary style at the second Meanwhile Mondays pop-up supper of the year on Monday 15 May.
Following a collective 25 years working at the pinnacle of the fine dining scene in Sussex – and 18 months in top kitchens in Asia and Australia exploring fusion dishes and techniques – chef Maria Chilton and Jimmy Gray launched their own business, Angelica Food, in autumn 2021 to provide private dining and events catering to clients in South East England and London.
“Provenance, locality and seasonality are at the heart of everything we do”, said Maria.
“Each week, we work alongside Kent and Sussex farmers and fishers to ensure that the premium produce available on our doorstep is creatively showcased in our visually-enticing and flavour-packed dishes”.
For their Meanwhile Mondays pop-up on Monday 15 May, Maria and Jimmy are taking some of their favourite seasonal ingredients and adding a little bit of spice inspired by their world travels and the flavours they enjoy themselves.
“There are lots of ways to spice up dishes without using the obvious household staples of curry powder or cajun spice mix”, said Jimmy.
Originating in north west Africa, Maria and Jimmy’s homemade Harissa paste features roasted red peppers, garlic, cayenne, coriander seeds, cumin; and they’ve created their own blend of premium spices to create their own recipe Ras El Hanout.
“We also have plenty of locally grown and easily accessible vegetables that pack a spicy punch”, said Jimmy, referring to the zesty mixed radishes and peppery rocket leaves that will feature on the pop-up menu.
Meanwhile Mondays are curated by My Brighton hotel and BITE Sussex. Each month sees a guest chef or restaurant take over the kitchen for a one-off meal based on a theme, priced at just £35 per person. Organic and natural wines are available to buy by the glass or bottle on the night.
